Basic recipe for Alfredo
for my Bistro Section
Hence the large qty's
it actually tastes divine
lessen the amounts if u wanna try at home
or i can do it for u, alter amounts that is
not to cook it for u though
Ingredients:
10 pints Half And Half
30 tablespoons Butter
20 tablespoons Flour
20 Cloves Garlic -- minced
3.33 cups Parmesan Cheese -- grated
2 1/2 cups Parsley -- coarsely chopped
5 pounds Bacon -- cooked,drained,chopped
Directions:
In a medium saucepan, melt butter over medium-low heat.
Add garlic and stir-fry for 2 to 3 minutes.
Stir in flour until well-blended. Add half & half.
Stir sauce over medium-low heat. Do not allow sauce to
boil or stick to bottom of pan. Reduce heat if necessary.
Allow sauce to thicken (about 20 minutes), stirring frequently.
When sauce is near desired consistency, add parmesan cheese.
Stir to melt cheese for 2 minutes. Remove sauce from heat.
Toss in bacon and parsley.
Serve over cooked pasta.
serves/makes 40.
